Ok, so technically, this isn’t migas.  I admit that.

However, my husband loves this dish so much – and he calls it “Mel’s Migas”.  And that makes me happy.  So “Mel’s Migas” is it shall be called.

 

This is hands-down, our favorite breakfast.  And on a day like today, when nothing has gone right (missing chickens, broken bowls, spilled coffee), this meal is my solace.

 


Mel’s Migas

1 flour tortilla                                                                      

Home canned pinto beans

Shredded cheese

Tapatio (or other hot sauce)

Sour cream

1 pastured egg

Preheat cast iron skillet over medium-low heat.  Melt fat of choice in skillet (I used a tablespoon of lard).  Place beans in flour tortilla, covering half of it.  Cover with cheese and Tapatio sauce.  Fold tortilla top over (like a quesadilla) and grill in cast iron skillet over medium-low heat until beans are warm inside and outside is golden brown.  Top with sour cream and egg cooked to your liking (over-easy all the way for me, baby!).  I added a smidge of local garlic-cilantro sauce on the side for extra kick.

And there you have it.  The breakfast meal that can make a bad morning a whole lot better.  Or any meal – I seriously could eat this for every meal, but some might say that was excessive.  🙂
