Mornings can be pretty dang busy here on the Faulk Farmstead. On my work days, I am up at 4:45am and out the door by 6. For me, this means no time to make breakfast – and I don’t get a break at work until almost 10am. My solution? Prepping a smoothie the night before so I can just pop it on the blender in the morning!
I use a blender like this one, thanks to my dear husband this past Christmas. The night before, I place all of the ingredients for the desired smoothie in the blender cup and stick the cup in the fridge. The next morning, all I need to do is pop it on the blender and pour it into a mason jar – then hit the road!
From summer to early winter, we had an abundance of kale here on the farmstead – more than I knew what to do with! Determined to find a way to preserve all of those healthy greens, I came across a convenient solution: Frozen kale discs! It’s simple: blend kale in a blender (add water gradually, just enough to keep things blending), then pour into muffin tins and freeze. After frozen, pop out of tins and into a zip lock bag, then store in the freezer. You now have discs of frozen kale, ready to pop into smoothies or soup! Each disc contains 1/3 – 1/2 cup of blended kale. Easy peasy! 🙂
1 disc of kale (see above)
honey to taste (I did 1 tablespoon)
1/2 cup kefir
In blender cup, combine all ingredients.
Blend at high speed until blended thoroughly. Pour into an adorably quaint mason jar, add a Cuppow, and enjoy! 🙂

- 3 strawberries
- honey to taste (I used 1 tablespoon)
- 1/2 – 2/3 cup kefir
- Combine all ingredients in blender. Blend until thoroughly combined.
